Dinner tonight is a sure crowd-pleaser! Everyone in the family will eat Joe's Sloppy Joes - what a blessing! Tonight they're made with ground turkey and a bit of barbecue sauce. On the side, I'm serving Seasoned Potato Wedges, which our Oldest Girl will certainly not be eating. Well, other than the one little one she has to eat in order to score dessert! But trust me when I say that unless you hate potatoes, you'll adore these scrumptious wedges.
Seasoned Potato Wedges
1/3 cup all-purpose flour
1/3 cup grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
3 large baking potatoes (about 2-3/4 pounds)
1 cup milk
1/4 cup butter, divided
In a resealable sandwich bag, combine the flour, Parmesan cheese, paprika, salt and pepper. Cut each potato into eight wedges; dip in milk. Place in the bag, a few at a time, and shake to coat. Place on a greased, foil-lined baking sheet. Drizzle with 2 tablespoons butter. Bake, uncovered, at 400° for 20 minutes. Turn wedges; drizzle with remaining butter. Bake 15-20 minutes longer or until potatoes are tender and golden brown.
We dip them in ketchup and sometimes the kids use ranch.

Turkey Ranch Quesadillas
My kids are picky in weird ways - they will eat spinach but not rice, cottage cheese but not potatoes, pineapple but not beef ... In short, the stuff that other kids live off of, they won't touch! Some of those choices are good, and some are not. I guess I just do what every mom does and hope for the best! The recipe I'm sharing today is a guaranteed hit with my kids. It combines many of their favorite ingredients so they're sure to gobble it up!
Turkey Ranch Quesadillas
4 thin slices smoked deli turkey
2 cups (8 ounces) shredded cheddar cheese
4 tablespoons Ranch dressing
1/2 cup fresh spinach leaves
Half and apple, your favorite, cored and thinly sliced
4 flour tortillas, fajita size
Spread Ranch dressing on two tortillas, sprinkle with half the cheese. Cover with spinach leaves, layer with turkey, apple slices, and remaining cheese. Top with remaining tortillas. Heat a medium skillet over medium hat. Add quesadilla, cook for 3-4 minutes per side, until heated through. Cut each quesadilla into quarters and serve warm.

Pizza Joes
I'm a big believer in using up leftovers creatively. Who wants to just heat old chicken casserole in the microwave? It's much more fun to re-create leftovers into new meals. I also like to use things up quickly, partly because I'm just picky and a little paranoid that way about food. I rarely place food in the fridge that doesn't already have a purpose laid out in my mind. For dinner recently, I combined leftover cooked ground venison with leftover spaghetti sauce, with leftover pepperoni, with leftover mozzarella cheese, with fresh sandwich buns to make Pizza Joes!

Just wanted to say it one more time.
Anyway, here's the recipe:
1 small onion, chopped
1 clove garlic
1 lb ground venison, turkey, or beef
1 26 oz. jar spaghetti sauce (or less if you'd like the mixture to be thicker)
32 pepperoni slices
2 cups shredded mozzarella cheese
8 sandwich buns
In a large skillet, cook onion, garlic and ground meat until no longer pink. Stir in the spaghetti sauce and heat through. Meanwhile, separate sandwich buns, placing the bottom buns on a baking sheet. Spoon 1/2 cup meat mixture onto each bun. Top each with 4 slices of pepperoni and 1/4 cup of mozzarella. Broil for 4-5 minutes until cheese is melted. Add the top bun and serve!
This recipe, like most of mine, is pretty easy to adapt to your family's tastes. Any of your favorite pizza toppings like green pepper, black olives, mushrooms, would be great in here.

Joe's Sloppy Joes
Whenever I ask The Boy if he has any requests for dinner over the following week, he invariably replies with "Sloppy joes." This recipe is just for him.
Joe's Sloppy Joes
1 pound lean ground beef (or turkey or venison)
1/2 sweet onion, chopped
2 cloves garlic, chopped
2 tablespoons brown sugar
1 teaspoon chili powder
dash of nutmeg
salt and pepper to your taste (you may not have to add any)
1 bottle chili sauce
1/2 cup ketchup
1/2 cup salsa
1/2 cup beef broth (optional)
In a large skillet, saute meat, onion and garlic over medium heat until the meat is browned. If you use very lean turkey or venison, you may need to add in a tablespoon or so of oil. Stir in seasonings and saute for a couple more minutes; then add in chili sauce, ketchup and salsa. At this point you really just have to heat the mixture through for 5-10 minutes and it's ready to eat. I prefer to add in some beef broth in order for it to all simmer together a while longer. This makes enough for about 8-10 sandwiches.
*This freezes really well!
* An option we all like just as much is to use barbecue sauce in the place of the salsa. They still taste like sloppy joes, but with a smoky flavor.

Sara's Secrets for Weeknight Meals
This cookbook
is wonderful! I checked it out from the library several years ago after becoming a fan of Sara Moulton's show on Food Network. I read it through, loved it, and then forgot (mostly) about it until recently. I checked it out again back in October and I'm still a big fan. Sara's way of looking at food and its preparation is very much like my own, and I've learned a lot from her. I've made several of her recipes over the last couple of weeks; each one has been a big hit with my family. One of our favorites was Asian Turkey Burgers. I only made a couple of changes. One was to substitute shredded carrots for the red peppers (I didn't have any!). The other was that I served it with a simple coleslaw. My husband ate his burger topped off with the slaw. The whole family ate every bite and loved it! That's a pretty rare feat in any house with at least one child.

Cheesy Turkey Burgers
These burgers are a family favorite! I love a good beef burger, and this turkey burger is almost as good. I got the recipe several years ago from the always faithful Taste of Home. I serve these on wheat buns with Swiss cheese, lettuce or spinach and ranch dressing or olive oil mayo. Add in a bag of your favorite chips and you've got dinner in under thirty minutes! Got more time? Make these delicious roasted potatoes to serve on the side.
Cheesy Turkey Burgers
4 ounces reduced-fat cream cheese
1/2 cup shredded Mexican cheese blend or mozzarella
1 small onion, grated
3 tablespoons old-fashioned oats
2 tablespoons minced green onions
1 garlic clove, minced
1/4 teaspoon poultry seasoning
1/2 teaspoon salt
1-1/2 pounds lean ground turkey
In a bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into eight 1/2-inch-thick patties. Cook in batches in large skillet coated with a couple of tablespoons oil. Cook 5-6 minutes on first side, flip and cook for 5-6 more minutes.
